Retiro, or ‘Finca El Retiro’ as it is officially called, is one of the handful of farms owned and managed by the Pacas family in El Salvador. We love seeing what they come up with. They have a history of innovation and discovery that goes back many generations, from naming the famous Pacas variety almost a century ago to unveiling the mysterious Bernardina within the last few years.
Retiro is a semi-washed Pacamara, a hybrid between the Pacas and Maragogype varieties. Semi-washing is like honey processing, except that it involves some wet fermentation, which is why the semi-washed label is preferred to honey in this case.
