Cartel has had a relationship with the Alvarez family and their El Borbollón Estate coffee for several years. Grown between 1300 and 1500 meters above sea level in the volcanic Santa Ana region of El Salvador, this washed red bourbon shines with terroir and genetic singularity. The coffee tree ‘leaf rust’ outbreak in recent years pressured many farmers in El Salvador to give up on Bourbon varieties, but we are proud to reward the steadfastness of the Alvarez family with continual customer loyalty. El Borbollón is one of our direct source farms, which means we have gone directly to the source to taste coffees, share meals, and tell stories with the producers. Guachoca is one of the small farms owned by the famous Pacas family. They have been contributing to specialty coffee production in El Salvador for 8 generations, and have a reputation for uncompromising quality and deep ethical impact on the communities of their employees.
This naturally processed coffee consists of one-hundred percent Bourbon and is grown between 1410 and 1600 meters in the noteworthy Apaneca Ilamatepec region. Like many farms which historically only produced washed coffees, the adaptation to natural processing has been done with great care for detail and high-level sorting. Natural Bourbons from El Salvador are among the highest quality examples of this method in the world. Guachoca combines the powerful taste of this process alongside the elegance of El Salvador’s terroir and the genetic singularity of Bourbon.
